This winter's been very mild.
Still, we've had a few days where soup was the choice for supper.
What's better than homemade tomato soup and a grilled cheese sandwich?
I didn't have any fresh tomatoes, so I used these instead.
Does anyone else always wipe the tops off of cans and bottles before opening?
One onion and a couple of cloves of garlic chopped are added to the pot.
Ahhhhhhhhhhhhhh, a real belly warmer!
Homemade Tomato Soup
2 cans diced tomatoes
(or 4 C fresh, if you have them)
1 large onion, chopped
2 cloves garlic, minced
1 t salt
1/2 t red pepper flakes
1 bay leaf
Sautee onion and garlic in 2 T olive oil.
Add tomatoes, herbs and 4 C water.
Bring to the boil, then turn down to a simmer.
Cook 20 minutes to 1 hour.
Keep covered for soupier texture,
uncovered for thicker soup.
Remove bay leaf and puree with hand blender or processor.
Enjoy!

ReplyDeleteThat's very similar to the way we make it too. Sometimes we add some of our frozen pesto to it before we blend it. This is one of my favourite winter lunches.
