Banana Bread

We don't grow our own bananas,
although I guess we could considering our climate.
They are on the weekly shopping list,
as they are one of Big K's favorites.
When bananas get too ripe,
we use them for banana bread.
We don't like wasting food around here.




Banana Bread

1 1/2 C flour
1 t cinnamon
1/2 t baking soda
1/4 t baking powder
1/4 t salt
3/4 C sugar (or sucanat)
2 overripe bananas, mashed
3/4 C light olive oil
1 egg
1/2 C walnuts

Combine bananas, sugar, oil, and egg in medium bowl.  Mix well.
Add dry ingredients and then add nuts. 
Preheat oven to 350 degrees.
Pour mixture into lightly greased loaf pan.
Bake 35 minutes, then cover with foil and bake an additional 10-15 minutes.
Cool on wire rack.
Makes 1 yummy loaf.

  1. Well, I just had my "duh" moment--I have a banana bread recipe I enjoy, but rarely make because in order to get it to bake all the way through, I have to "over-bake" it. It's so dense it takes forever for the center to finish.
    I never thought of covering with foil!! Thanks!
