Chocolate Shortbread Cookies
2 C flour
1/4 C dark cocoa
1/4 t salt
1 C butter
3/4 C sugar (or sucanat)
1 t vanilla
Sift dry ingredients together in a bowl.
Cream butter and sugar, then add vanilla.
Add flour mixture, blending well and shaping into log.
Refrigerate at least an hour.
Cut into 1/4" slices and bake 20-25 minutes at 325 degrees.

The chocolate shortbread looks delicious. I've never seen it in the chocolate variety. I bet it's great with a big tall glass of ice cold milk. Yum!
