Classic Mac-n-Cheese

Who doesn't like mac-n-cheese?
I used to buy the dairy-free frozen version
before I figured out that I could eat cheddar,
even though I'm lactose intolerant.
What a fantastic discovery!
This is the ultimate comfort food.




Old Fashioned Mac 'n Cheese

4 C cooked macaroni
2 T melted butter
3 C grated Cheddar cheese
2 C rice milk
1 C bread crumbs
1 t salt
1/2 t onion powder
1/2 t garlic powder
1/2 t black pepper
2 eggs, beaten

Combine macaroni, cheese and seasonings.
Place in 8 X 13" baking dish.
Preheat oven to 350 degrees.
Combine eggs and milk and pour over noodles.
Sprinkle with bread crumbs.
Bake 40 minutes until browned on top.
*This is even better the next day.*



Now, who needs a little comfort?

    We so enjoy that breaded parmesan chicken recipe that you had on a long time ago. It is definitely hubby's FAVORITE chicken recipe.
    I think of you every time I make it (I'm embarrassed to say he wants it every week. Are we in a rut? --LOL!!)

  2. Definitely a comfort food! I don't know if I'm lactose intolerant, but cheese normally doesn't sit well with me. But this recipe sounds really good :)

    1. I can't drink milk, but I can eat aged cheese, like cheddar and parmesan.
      There's a dairy-free version on the recipe list under gluten-free. It's not the same, but at least my Lil' Guy can enjoy a classic.
