Mimi's Madeleines



My mom was probably the best home cook I've known.
Although I can't hold a candle to her abilities in the kitchen,
I'm grateful for growing up in a house
where food was valued.




And even though she is no longer able to cook,
I can relive my childhood through her recipes.

Madeleines are a classic French cookie.
They are light, airy with just a touch of lemony goodness.

Mimi's Madeleines

1 1/4 C sifted flour
1/2 t baking powder
1/4 t salt
3 eggs
1 t vanilla
2/3 C sugar (we use sucanat)
2 t grated lemon (we used one)
3/4 C melted butter
powdered sugar for dusting

Sift flour, baking powder and salt together.  Set aside.
Beat eggs until light, add vanilla and gradually beat in sugar.
Continue to beat until volume increases fourfold.
Fold in lemon zest, then fold in flour mixture.
Stir in butter.
Brush a bit of melted butter on madeleine pans
and pour 1/4 C batter into molds.
Bake in preheated 350 degree oven for 12-15 minutes.
Remove to wire rack to cool and sift powdered sugar on top.
Enjoy!

  1. I love Madeleines! They are so elegant yet unpretentious.

    When looking at your photo of the recipe and thinking how special it is to have a recipe in a loved one's own handwriting -- I'm thinking it would be really nice to create one of those printed computer or blog books with family recipes, with a photo of the original recipe, then a printed version, and photo of the dish -- what a special family cookbook that would be!

  2. It is so sweet to have the recipes from those who taught us to cook. My granny let me play in the kitchen with her all the time and so many of my most-loved recipes are hers. She passed a few years ago, and I still think of her every time I make one of her recipes - and use her serious rolling pin!

    Great post! I really like madeleines, I will try this!

  4. I don't think I've eaten Madelines, but from your description of them, and they are lovely shaped I don't know why I havn't.. A sweet lemony cookie...maybe this week, although I don't have a mold, can you make it without? Thank you for sharing in my hot rolls with me over a warm cuppa...I appreciate it so...thank you for this recipe,

    1. Thanks for your kind words.
      The pan would probably need to be somewhat shallow in order for them to retain their lightness. Maybe you could use mini-muffin tins, but you'd have to adjust the cooking time, I imagine. Give it a go and let me know how it turns out!

  6. I love Madeleines! Growing up french in Montreal, I have memories of me being at daycare, eating these at snack time. Daycare! I have a good memory, I know. Could be why these have such a special place in my heart. I have the pan, but I am going to have to figure out how to make them vegan and gluten free before I can have them again. In the mean time, I can just enjoy looking at your pictures ;)
