Friday Fotos

 

 
Our family gnome is about to get some company.
This week, there was a deal on a local sell/trade site
and I couldn't resist.
Two more magical gnomes will be joining the homestead.
Unfortunately, I haven't yet gotten them to pose for a picture,
(they can be very elusive),
but I'll get one taken real soon.
One will watch over the front porch,
while this guy and another will patrol the garden.
I love me some gnomes!
 
 
 These dish rags were first discovered at a friend's house.
I do some dog sitting for her and her husband,
and after having used them in her kitchen, I fell in love!
They do such a great job, they dry quickly and they can be
washed in the washing machine or the dishwasher!
There are a variety of patterns to choose from,
but this bunch just called my name.


 
Some time was spent planning the spring garden.
This will be the first time growing spring veg in our new location.
As it is framed with mature trees,
it will be curious to see how well things grow.
The initial garden had full sun most of the day,
but it had to be moved due to septic issues.

The garden website where I usually make my plans to print out
is no longer available.
I was able to squeeze in just before the service ended,
but I may need to find something similar. 

 
Flower seeds are kept in old file drawers in a spare room.
Inside each drawer, seeds are alphabetized
(yes, I'm that kind of person),
and left in their original containers when possible.
There are some seeds that need to be  chilled before planting,
(milkweed is one that comes to mind),
so we save a little space in our garage fridge for those.

 
Veg seeds have their own set of file drawers,
and are sorted according to type of crop
and also arranged alphabetically.
Our herb and flower seeds are stashed in a different set of file drawers.
Far from being filled to capacity,
perhaps with a bit more seed saving this spring and summer
they will be bursting with goodies for the next season.


 With the extra eggs we had on hand,
a delicious rice-crusted quiche was made
and finished within two days.
The yellow rice was leftover from a batch I'd made,
and I simply added sauteed onions, potatoes, spinach
and a bit of vegan cheese into the eggs.
Maybe when our girls are laying more steadily,
I can make it on a monthly basis.

Rice Crust Quiche


This has to be one of the best things I've ever made.
We had an abundance of eggs this week,
and it just felt like a great thing to do with them.
We also had some leftover yellow rice,
which is just Jasmine rice with a bit of tumeric added.
It's gluten-free, since cooked rice acts as the crust,
and it can be made vegetarian by keeping out the meat,
or dairy-free by substituting your favorite alternative milk and cheese.

Rice Crust Quiche



Butter a 9" pan and press cooked rice to form crust.
Bake for 3 minutes at 350 degrees.



Add 1 C each of cheddar and Swiss cheese,
plus any cooked veggies you may have in the fridge.



In a bowl, combine 4 eggs, 3/4 C milk and 1/4 C parsley, along with these spices:
1/8 t paprika, 1/8 t onion powder, 1/8 t garlic powder, salt & pepper to taste.
Beat the liquids and spices together in a bowl and pour them over the rice crust mixture.



Bake at 350 degrees for about 30 minutes.
Enjoy!


This is a great way to use up leftovers in the fridge.
What a wonderful alternative for those who are unable to consume the conventional flour crust.
The next time you have a truckload of eggs and some leftovers,
I hope you'll give this a try.

Egg Pie

I had forgotten how good a simple quiche could be.
With the acquisition of some farm fresh eggs,
I knew I had to do something different.
Egg pie seemed like a good idea.


The recipe is from Jenna Woginrich's
This is a new addition to my menu-by-the-month plan.
The pie crust recipe is also in the book.
Supper (or brunch) just couldn't be easier.



Three-Hen Quiche



olive oil
1/3 C diced onions
3 large eggs
1 C milk
salt/pepper
1/2 C-1 C grated cheddar cheese
1 pie crust



Preheat oven to 350 degrees. 
Heat oil in skillet and saute onions. 
Add to pie crust. 
Beat eggs together with milk in a glass measuring cup. 
Add salt/pepper to taste.   
Sprinkle cheese over onions and then pour in egg mixture.
Bake 45-50 minutes, until golden. 
Enjoy!



*I added leftover sauteed mushrooms and diced roasted potatoes from the fridge to the pie pictured.
Pretty much any leftovers will do nicely.*
