Meatless Monday!


Have you heard of "Meatless Monday"?
It's a movement started almost 10 years ago
in order to bring attention to the world's need
for better nutrition.
We eat vegetarian at least twice a week,
(myself more often, as I eat no red meat or poultry)
and many of the recipes we feature can be adapted to
non meat-eaters.


Although it's still in the 80's here,
I'm w-i-l-l-i-n-g fall to show itself and stay
by preparing this dish,
meant for cooler days.
C'mon autumn...




Penne with White Bean Sauce
(Sun Sentinel)

1 lb. pasta (semolina or gf)
1/4 t red pepper flakes
1 t dried basil
1 rib celery, chopped
(we substituted 1/2 C shredded carrots)
1/4 C parsley, chopped
4 garlic cloves, minced
1 1/2 C white beans
1/3 C olive oil
1 large tomato, cubed

Cook pasta al dente. 
Heat oil in large skillet. 
Add garlic, pepper flakes and celery,
and cook about 4 minutes. 
Add beans, tomato, and spices and cook for 5 minutes
or until slightly thickened. 
Add parmesan if desired.
Enjoy!

  1. I think this looks delicious. We've started eating a lot less meat --we switched to organic grass fed and the prices are outrageous--so it helps curb our appetite for it-LOL! I could never get hubby fully off of meat, --this is a good compromise for us.

  2. This looks tasty! We eat meat at the max of once per week since we only consume what we raise. This keeps us in line and makes it a real treat. Thanks for sharing this recipe :)
