I'm So Blue!


We were recently gifted with organic blueberries.
While blueberries have never been my favorite fruit, 
after trying them in pancakes,
I may be a convert.



We use a whisk to sift ingredients.




Being lactose-intolerant, I can't drink milk,
so am grateful for delicious substitutes like almond or rice milk.




Mixing the liquids in a measuring cup
means one less bowl to wash.




The blueberries are added to the mixture,




and then gently folded in so as not to break them.




On medium heat,
add butter to a skillet and fry these babies up.




Blueberry Pancakes

1 1/4 C flour
1/2 t salt
1 T baking powder
1 1/4 t sucanat

1 C almond or rice milk
1 egg
1/2 T butter, melted
1/2-1 C blueberries

Combine dry ingredients and use a whisk to sift.
Add liquids to measuring cup and mix gently.
Add liquid to dry ingredients.
Fold in blueberries.
Cook on medium heat 2-3 minutes per side.
Enjoy!



(I highly recommend using an entire cup of blueberries.)

    Your blueberry pancakes look delicious! I don't know what it is about blueberries, but I love them in muffins; however, I can't sit and eat them straight from a bowl like my husband does. You are more than welcome to make me pancakes anytime :-)

  4. Delish! I love blueberries and pancakes, so this is definitely a good recipe for me to try. It's hard to find organic blueberries around here, but next time I find some I'll be cooking these up for sure!

    1. They were yummy. To make the vegan version, you could substitute light olive oil for the butter and apple or pear sauce for the egg.

    2. Vegans can also use an acid/base combination for the rise. I often use a bit of sourdough starter and baking soda to get wonderfully puffy baked goods.

  6. Love, love, love those blueberries! Ours have finally started ripening and we're enjoying all sorts of blueberry treats. Fortunately I can drink goats milk, but before we had goats I used almond milk for everything. So tasty.

  7. YUM! looks wonderful and I love them in anything! :) ( Not by themselves, though...weird, huh? I love most fruits, fresh, by themselves...but blueberries I like best in baked recipes :)
