We got a boatload of organic carrots from our local co-op.

Chop 'em up coarsley and throw 'em in the crockpot.



Chop 'em up coarsley and throw 'em in the crockpot.
Saute an onion with some olive oil
until they turn golden brown.
Add a little salt for flavor.
Throw it in the crock.
You can add ginger or a bit of cinnamon if you like.
Add water, a bay leaf, a clove of garlic and let it simmer.
Cook for 8 hours on low or overnight.
Remove the bay leaf and whiz up in a processor
or use a hand-held immersion blender.
Taste for seasoning and adjust as necessary.
Enjoy a hot bowl of soup tonight!
