Armadillo Potatoes

Need a fun and easy side dish?
Try these!
They are quick, simple and delicious!
How can you go wrong with
potatoes, olive oil, garlic and salt?
The original recipe is Ina Garten's,
and can be found here.

Take any baking potato,
and slice it thinly (not all the way through),
leaving the bottom of the potato intact.
Drizzle between the slices with olive oil, garlic
and a sprinkling of salt (and red pepper flake if you like a bit of heat).
Place on a parchment-lined baking sheet.
Bake at 425 degrees for 35-45 minutes.

Any favorite herb could be added.
These would be great for a Southwestern meal,
perhaps smothering them with homemade chili and cheese.
Who needs taco shells?

  1. Daisy, Aww, these are the best. I found this recipe a few months ago on another blog and wouldn't bake a potato any other way now. It's a totally simple and easy way to make a baked potato even better. I think I'll make another one today.
