Last week was a great time to be outdoors.
While tidying up a few areas of the garden,
I decided to harvest our sweet potatoes.
As always, it was quite gratifying.
It started here a few months ago.
A sweet potato was suspended in water until it formed roots.
After a couple of weeks, those roots lead to leaves sprouting,
and you know you're on the right track.
Once the slip is planted in the soil,
it's just a matter of time before the beautiful chartreuse leaves expand...
and practically take over.
This vine can be grown as a groundcover or on a trellis, as seen here.
The most delicate and sweet lil' flowers will appear
and make you think you've got morning glories growing!
Once the leaves start to turn yellow,
they can be harvested and enjoyed.
Once picked, we keep them in a box on top of newspaper to dry out, or cure.
After 10-14 days, they are ready to be savored in your favorite recipe.
This is honestly one of the easiest plants to grow.
Everyone should give it a go!
